Apple Pie Breakfast Parfaits

Apple pie for breakfast?? Oh yes! And now it can be done in a nourishing, easy to prepare, make-ahead-friendly way. Meet Apple Pie Breakfast Parfaits!

These adorable little parfaits are sure to get you in the holiday spirit, and you don't have to wait until Thanksgiving to make them. They're a great seasonal breakfast all fall (and winter!) long, and the ingredients are so nourishing that they shouldn't just be reserved for special occasions. Apple pie for breakfast every day!!

These cozy parfaits arose out of a seasonal collaboration with OHi Superfood Bars. I'm designing a few fall recipes for them that highlight their gorgeous whole food bars, and these parfaits were just too fun to not share on my own blog. These parfaits come together in a snap and can easily be scaled up as needed (especially if you have visitors over Thanksgiving!). The base of the parfait is a crumbled Almond Crunch OHi Bar, although you could also use your favorite nutty granola. The middle layer is yogurt, and the top layer is a super-cozy quick apple pie filling made by sauteeing apple in warming spices and a bit of maple syrup. They're easily vegan and/or free of refined sugars based on your yogurt choice.

You can also meal-prep these parfaits! Either prep a bunch of apples at once and keep the ingredients separate, or assemble them in jars for the week. They're a great grab-and-go breakfast for busy days. Hosting guests over the holidays? You could set up a build-your-own parfait bar (so fun!), or make mini-parfaits to accompany a brunch.

Although I designed this to be a breakfast recipe, Dave and I have been enjoying these for dessert as well. Why not?? They're so much easier than pie and make my body feel better too.


I always hear stories from people over the holidays about skipping breakfast to "save calories for later" or because they're too busy to eat. Please don't! Give your body the nutrients it needs to function properly; running on an empty tank will just make you miserable. So will running on food that's basically devoid of nutrients (e.g. real pie...).

Thoughts About Ingredients
(These are all just suggestions, since rogue is more fun than recipe)

  • Medium-sized apple
  • Dash of coconut oil or butter
  • 1 tbsp maple syrup
  • 0.25 tsp cinnamon
  • Pinch of nutmeg
  • Pinch of allspice
  • Pinch of salt

  • 0.25 c yogurt of choice, vegan if desired
  • Few roasted (or maple roasted!) pecans
Thoughts About Method
(These are all just suggestions, be creative and make it yours)
  1. Dice up an apple, then saute it over medium heat with a dash of coconut oil or butter for a few minutes until barely tender.
  2. Decrease the heat to low and add in the maple syrup, cinnamon, nutmeg, allspice, and salt. Continue cooking for several more minutes until the apple is tender and resembles apple pie filling.
  3. Dice up an Almond Crunch OHi Bar.
  4. In a tall glass, layer the OHi Bar, yogurt, and apple pie filling as desired. Top it with a few roasted pecans.
  5. Having these for dessert?? Go crazy and add caramel sauce or whipped cream.
