Vegan Granola Almond Butter Adventure Cookies

These protein-packed, nourishing granola cookies are begging to be taken on all of your adventures. They get their sweetness from dates and their moisture from almond butter, so they're the perfect hiking snack.

Ingredients

  • 1 c dates, pitted
  • 1 c natural, drippy almond butter
  • 0.75 c granola, divided, such as True North First Date Granola
  • 0.25 c maple syrup
  • 1 tsp baking powder
  • 0.25 tsp salt, only if using unsalted almond butter

Instructions

  1. Measure all ingredients into a food processor, setting aside a quarter cup of the granola for later use. Process until you have a sticky, sandy mixture that clumps together.
  2. Use cookie scoop or tablespoon to scoop out the dough 2 tbsp at a time. Form the dough into a ball. then flatten it into a disk about half an inch thick. Press the dough together firmly to make sure the cookies keep their shape.
  3. For each of the cookies, press a teaspoon of additional granola into the top.
  4. Place the cookies on a parchment-lined baking sheet. They'll puff up but won't spread, so don't worry about giving them a lot of space to grow.
  5. Bake at 350 degrees for 15 minutes. They will still seem soft in the middle because the dates won't bake the same way flour does. That's okay- they'll firm up as they cool.
  6. Cool the cookies completely on the sheet, only moving them once they have reached room temperature.
