Fresh Herb Green Goddess Hummus

This creamy Green Goddess Hummus is packed with fresh herbs like basil, cilantro, and mint. It's an easy, protein-rich, vegan dip or spread that’s perfect for spring and summer snacks, gatherings, and healthy meals.

Ingredients

For the Hummus

  • Two 15-oz cans of chickpeas
  • ½ c creamy tahini
  • 1 c baby spinach
  • 1 c fresh basil
  • 1 c fresh cilantro
  • ½ c fresh mint
  • 1 tsp sea salt

For the Garnishes

  • Light drizzle of robust, flavorful olive oil
  • 2 tbsp roasted salted pistachios
  • 1 tsp sesame seeds
  • Additional basil, cilantro, and mint leaves

Instructions

  1. Drain and rinse the chickpeas.
  2. In a food processor, combine all the hummus ingredients. Process for several minutes until a smooth, creamy texture develops, scraping down the sides as needed. If you have trouble getting a smooth hummus, add a splash of water.
  3. Transfer the hummus to a serving bowl.
  4. Garnish the hummus with a drizzle of olive oil, pistachios, sesame seeds, and additional fresh herb leaves.
