Pineapple Guacamole (Hawaiian-Inspired, Spicy Variation)

This easy pineapple guacamole balances salty, savory, and sweet flavors. Inspired by Hawai'i, it's the perfect appetizer for a summer party or BBQ.

Ingredients

  • 2 c cubed, fresh pineapple
  • 6 baby red bell peppers
  • 3 ripe avocados
  • 0.25 tsp salt
  • 0.25 c chopped fresh cilantro
  • 2 tbsp very finely chopped fresh mint
  • Freshly-ground black pepper
  • 2 tbsp roasted salted pepitas

Instructions

  1. Cut the pineapple into small cubes, dice the baby bell peppers or slice them into thin rings, and cut the herbs very finely.
  2. Cut the avocados open and scoop the flesh into a large mixing bowl. Add salt, then mash the avocados partially. Adjust the salt to taste.
  3. Add the cubed pineapple, sliced red peppers, and chopped herbs to the avocado, then stir gently.
  4. Transfer the guacamole to a serving dish. Top it with freshly ground pepper and roasted salted pepitas, then enjoy immediately.
