Hawaiian Pineapple Guacamole
This Hawaiian-inspired pineapple guacamole balances salty, savory, and sweet flavors. It's the perfect appetizer for a summer party or BBQ.
Ingredients
- 2 c cubed, fresh pineapple
- 6 baby red bell peppers
- 3 ripe avocados
- 0.25 tsp salt
- 0.25 c chopped fresh cilantro
- 2 tbsp very finely chopped fresh mint
- Freshly-ground black pepper
- 2 tbsp roasted salted pepitas
Instructions
- As needed, cut the pineapple into small cubes. Dice the baby bell peppers or slice them into thin rings.
- Cut the avocados open and scoop the flesh into a large mixing bowl. Add salt, then mash the avocados partially. Adjust the salt to taste.
- Add the cubed pineapple, sliced red peppers, and chopped herbs to the avocado, then stir gently.
- Transfer the guacamole to a serving dish. Top it with freshly ground pepper and roasted salted pepitas, then and enjoy immediately.
