Healthy Monster Cookies (Vegan & Gluten-Free)

Bursting with luscious peanut butter, chewy oats, and puddles of chocolate, these healthy monster cookies are delicious AND nutritious. You'd never guess that they're vegan, gluten-free, and entirely fruit-sweetened.

Ingredients

  • 2 c pitted dates
  • 1 c natural peanut butter
  • 0.25 c unsweetened plant milk of choice
  • 2 tbsp flax seed meal
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 0.25 c old-fashioned oats
  • 0.25 c shredded coconut
  • 0.5 c chocolate chunks and/or candies
  • Optional sprinkle of flaky sea salt

Instructions

  1. Preheat the oven to 350.
  2. Add the dates, peanut butter, plant milk, flax, baking powder, and salt to a food processor. Process just until a sticky ball develops.
  3. Add the oats and coconut and pulse the food processor several times.
  4. Remove the blade from the food processor and add the chocolate, then mix it in by hand.
  5. Scoop the dough into balls about 2 tbsp in size.
  6. Flatten each ball of dough into a disk about half an inch thick. Note that these cookies won't spread, so you'll be forming them into cookie shapes before baking.
  7. Place the cookies on a parchment-lined baking sheet. If desired, sprinkle each with a pinch of flaky sea salt.
  8. Bake at 350 degrees for about 12-15 minutes until the cookies are just barely browned around the edges. They will still seem soft in the middle but will firm up as they cool.
