Pink Dragonfruit Pineapple Rum Fizz

Bursting with sweet pineapple and tropical dragonfruit, this festive pink cocktail is perfect for a spring or summer brunch party. It uses just a few ingredients and can even be batched ahead of time.


  • 4 oz pineapple juice
  • 1 tsp pink pitaya (dragonfruit) powder
  • 1.5 oz white rum
  • Dash of soda water
  • Pineapple wedge for garnish


  1. In a cocktail shaker, dissolve the pink pitaya powder in the pineapple juice by stirring vigorously.
  2. Add the rum and ice, then shake well.
  3. Double-strain into a tall, narrow serving glass filled with ice.
  4. Top with a dash of soda water and garnish with a pineapple wedge.
