Rainbow Fruit Skewers with Mojito Yogurt Sauce

These rainbow fruit skewers are fresh, colorful, and vibrant. Paired with a lime and mint dipping sauce, they're the perfect easy summer party dessert.

Ingredients

  • 8 whole strawberries
  • 8 cantaloupe balls
  • 8 pineapple chunks
  • 8 honeydew balls
  • 8 large blueberries
  • 8 large red grapes
  • Zest of a lime
  • 1-2 tsp lime juice
  • Sprig of fresh mint
  • ½ c full-fat unsweetened vanilla yogurt
  • 1-2 tsp honey or maple syrup

Instructions

  1. Cut the tops from the strawberries.
  2. Thread a strawberry onto a skewer, with the pointed end facing upward.
  3. In rainbow order, thread the remaining fruit onto the skewer (cantaloupe, pineapple, honeydew, blueberry, and grape).
  4. Repeat for the remaining skewers, creating 8 total. Lay the skewers on a serving platter.
  5. Zest the lime, setting the zest aside, and then juice the lime.
  6. To make the mojito yogurt dipping sauce, chop the mint very finely. Stir together the yogurt, honey or maple syrup, lime juice, and fresh mint. Adjust the sweetness and tartness to your own tastes. Add the dipping sauce to a small bowl in the center of the platter.
  7. Sprinkle the lime zest on top of the fruit and dipping sauce.
