Healthy Strawberry Lemon Yogurt Parfait with Granola
This healthy strawberry yogurt parfait is an easy spring breakfast that can be vegan, gluten-free, or grain-free. Perfect for meal prep, on-the-go, or spring brunch parties.
Ingredients
- 6-8 fresh strawberries
- Zest of a lemon
- 1 tsp maple syrup
- ½ c vanilla yogurt
- ¼ c low-sugar granola
- Additional strawberry slices and/or lemon peel for garnish, optional
Instructions
- Cut the strawberries into bite-sized pieces and add them to a small mixing bowl along with the lemon zest and maple syrup. Toss so that the strawberries are evenly coated.
- In a tall serving glass or jar, layer the three components (strawberries, yogurt, and granola).
- Garnish with additional strawberry slices and/or fresh lemon peel if desired.
