Hawaiian Tropical Fruit Guacamole

A fresh and fun take on the classic, this tropical guacamole combines sweet, juicy Hawaiian fruit with succulent grilled red onions. It's the perfect dip for a summer party or a picnic on the beach.

Ingredients

  • Small red onion
  • Oil of choice for grilling
  • Half a ripe mango
  • Quarter of a ripe papaya
  • 3 ripe avocados
  • Few generous pinches of cumin
  • 0.25 tsp salt, or to taste
  • Juice of a lime
  • Handful of fresh cilantro

Instructions

  1. Slice the red onion into rounds about a quarter of an inch thick and grill them on a well-oiled rack or grill pan. Rotate them part-way through to get cross-hatched grill marks, then flip them and cook the other side.
  2. Let the onion cool completely, then dice finely.
  3. While the onion cools, peel the mango and papaya and cut both into small cubes.
  4. Combine the avocados, cumin, salt, and lime juice, then mash gently with a fork to your desired texture.
  5. Chop the cilantro finely with a very sharp knife.
  6. Add the grilled onion, diced fruit, and cilantro to the guacamole and stir gently. Serve immediately.
