Tropical Ocean (Blue Coconut) Matcha Latte

This blue matcha latte is the perfect summer morning sip. The combination of coconut water, coconut milk, and the tropical ocean color will make you feel like you're sitting on a beach!

Ingredients

  • 3 tbsp water, divided
  • Few pinches of blue spirulina
  • 1 c unsweetened coconut milk beverage
  • 1 tbsp maple syrup, optional
  • ½  tsp matcha powder
  • ½  c coconut water
  • Ice for serving
  • Coconut whip, optional

Instructions

  1. In a measuring cup with a pour spout, combine 1 tbsp water with a few pinches of blue spirulina. Use a wand-style milk frother to dissolve the spirulina. Add the coconut milk and maple syrup (if using) and stir to mix.
  2. In a separate measuring cup or matcha bowl, combine 2 tbsp water with the matcha powder. Use a milk frother or matcha whisk to thoroughly mix the matcha into the water, making sure there are no clumps. Add the coconut water and stir to mix.
  3. Fill a tall serving glass with ice. Pour the blue coconut milk into the serving glass first, then add the coconut water matcha on top. If desired, garnish with coconut whip.
