One-Bowl Vegan Gluten-Free Peanut Butter Chocolate Chunk Cookies

These one-bowl vegan gluten-free peanut butter chocolate chunk cookies use vegan cream cheese for structure and flavor. An easy, delicious cookie recipe with minimal cleanup!

Ingredients

  • 8 oz cultured vegan cream cheese
  • 1 c natural, unsweetened peanut butter
  • ½ c maple syrup
  • 2 c oat flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¾ c dark chocolate chunks
  • ¼ tsp flaky sea salt

Instructions

  1. Preheat the oven to 350°.
  2. In a large mixing bowl, combine the cream cheese, peanut butter, and maple syrup. Whisk until no clumps remain.
  3. Add the dry ingredients (oat flour, baking powder, and salt) to the wet ingredients and mix with a spatula until the dough is thick and smooth.
  4. Stir in most of the chocolate chunks, reserving about 2 tbsp for pressing into the tops of the cookies.
  5. Scoop the dough into balls that are a heaping 2 tbsp in size, yielding about 12 cookies. Flatten each ball into a disk about half an inch thick, then press several additional chocolate chunks into the top of each cookie.
  6. Bake for 12-15 minutes until the cookies have barely begun to brown along the edges but are still soft inside. Sprinkle with flaky sea salt immediately after baking.
