White Chocolate Macadamia Matcha Cookies (Vegan, Gluten-Free)

These vegan matcha cookies are soft, gooey, and packed with sweet white chocolate and crunchy macadamia nuts. They're entirely plant-based, gluten-free, oil-free, and naturally sweetened.

Ingredients

  • ¾ c natural macadamia or cashew butter
  • ¼ c maple syrup
  • 1 tsp vanilla extract
  • ¾ c oat flour
  • 1 tbsp matcha powder
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ c white chocolate chips
  • ¼ c chopped macadamias

Instructions

  1. Preheat the oven to 350°.
  2. In a medium-sized mixing bowl, combine the macadamia or cashew butter, maple syrup, and vanilla. Whisk until smooth.
  3. Add the dry ingredients (oat flour, matcha powder, baking powder, and salt) to the wet ingredients and mix with a spatula until the dough is thick and smooth.
  4. Stir in most of the chocolate chips and macadamias, reserving about 1 tbsp of each for pressing into the tops of the cookies.
  5. Scoop the dough into balls that are about 2 tbsp in size, yielding 8-10 cookies. Flatten each ball into a disk about ½ inch thick, then press several additional chocolate chips and macadamias into the top of each cookie.
  6. Bake for 10-12 minutes, until the cookies have just barely set.
