White Chocolate Macadamia Matcha Cookies (Vegan, Gluten-Free)
These vegan matcha cookies are soft, gooey, and packed with sweet white chocolate and crunchy macadamia nuts. They're entirely plant-based, gluten-free, oil-free, and naturally sweetened.
Ingredients
- ¾ c natural macadamia or cashew butter
- ¼ c maple syrup
- 1 tsp vanilla extract
- ¾ c oat flour
- 1 tbsp matcha powder
- ½ tsp baking powder
- ¼ tsp salt
- ¼ c white chocolate chips
- ¼ c chopped macadamias
Instructions
- Preheat the oven to 350°.
- In a medium-sized mixing bowl, combine the macadamia or cashew butter, maple syrup, and vanilla. Whisk until smooth.
- Add the dry ingredients (oat flour, matcha powder, baking powder, and salt) to the wet ingredients and mix with a spatula until the dough is thick and smooth.
- Stir in most of the chocolate chips and macadamias, reserving about 1 tbsp of each for pressing into the tops of the cookies.
- Scoop the dough into balls that are about 2 tbsp in size, yielding 8-10 cookies. Flatten each ball into a disk about ½ inch thick, then press several additional chocolate chips and macadamias into the top of each cookie.
- Bake for 10-12 minutes, until the cookies have just barely set.
