A Perfect Summer Sip

Is there anything more iconic than a glass of ice-cold lemonade during the summer? That's why I was so excited when my friends at Koloa Rum asked me to develop a summery cocktail featuring lemonade. This cocktail is perfect for sipping at the beach, at a summer picnic, on the deck, at a BBQ, and at just about every festive outdoor occasion for the rest of the season.

The thing I love most about this cocktail is that it unites summery lemonade with my absolute most favorite coconut rum. The result is a distinctly beachy vibe that's totally fun and fresh. Topping it off with fizzy ginger beer creates a delightful, festive finish.

Easy and Fast!

While I love a fancy, complex cocktail (like my Planter's Punch!), long summer days and outdoor picnics call for a simpler, faster option. This cocktail uses only three ingredients (plus some lemon slices for garnish), all of which you can pick up at the store on the way to the beach or to an evening concert. Because of that, this one requires almost zero planning!

Even better, all these ingredients are easy to find; there are no exotic liqueurs, special juices, or fussy fruits. You can probably get all these things right at the liquor store! Because of that, this is one we've been gravitating to again and again for summer outings. As written, the recipe suggests mixing the drink in a cocktail shaker, but you can also mix it right in your serving glass if you're outdoors.

Let's Talk Ingredients

Here's what you'll need for this recipe, as well as some thoughts, tips, and possible substitutions. If you make any substitutions, I'd love to hear about it in the comments section below.

  • Coconut Rum. Koloa's coconut rum is my greatest love! Get yourself a bottle and cherish it all summer long. You'll see it featured in multiple recipes on this blog!
  • Lemonade. This cocktail is of course best with homemade lemonade! But for ease, store-bought is the way to go. Opt for something with real lemon juice and minimal sugar. Or, feel free to switch it up and use limeade instead for a different vibe!
  • Ginger beer. Similar to the above, choose an option with big ginger flavor and minimal sugar. We've really been loving Fever Tree's "Refreshingly Light".
  • Lemon slices. You'll use these to garnish the drink (although if you're at the beach or on a picnic, you can certainly omit them for ease).

Imagine you're headed to the beach... you want to bring a summery cocktail, but don't want to prepare or transport a bunch of ingredients. I've got you covered! This is the PERFECT cocktail for a summer evening outside thanks to its few, simple ingredients.

I'm so excited for you to try this fizzy, tart, tropical combination. Just these three simple ingredients combine to yield a whole that's much greater than the sum of its parts. It has a surprisingly complex and interesting flavor profile since each ingredient plays a very specific role. I'm a firm believer that coconut rum belongs in everything this time of year, and I think you'll agree after you try this beauty!

Coconut Ginger Lemonade Fizz

This simple summer cocktail unites tropical coconut with nostalgic lemonade and fizzy ginger beer. It comes together in minutes and is the perfect sip for a picnic, a day at the beach, or a summer evening on the deck.



  • 2 oz Kōloa Kaua’i Coconut Rum
  • 3 oz low-sugar lemonade
  • 2-3 oz low-sugar ginger beer
  • Thin lemon slices for garnish


  1. In a cocktail shaker, combine the coconut rum and lemonade, then shake well with ice.
  2. Fill a tall, narrow glass with ice, weaving thinly-sliced lemon wheels throughout the ice.
  3. Fill with ginger beer to the top of the glass.
