A Pumpkin Yogurt Parfait for Easy Fall Breakfasts

If you're looking for an easy fall breakfast that feels special and seasonal but also healthy, you're going to love this pumpkin yogurt parfait. With layers of naturally sweetened spiced pumpkin purée, creamy vanilla yogurt, and crunchy pumpkin granola, this parfait is as beautiful as it is delicious. It's also easily vegan, gluten-free, or low-sugar based on what components you choose (check out all the specific variations below), so it's a healthy breakfast that works for a wide range of dietary preferences.

One of the reasons I keep coming back to this pumpkin yogurt parfait is its versatility. It works well as a fast, nourishing breakfast, snack, or lunch all season long. If you have a busy week coming up, you can prepare enough for a few days and have them sitting in jars in the fridge, ready to grab on your way out the door. Or, if you're hosting guests for the holidays, try setting up a build-your-own pumpkin parfait bar. You can even make mini versions for a brunch!

What is a Breakfast Parfait?

A breakfast parfait (also sometimes called a yogurt and granola parfait) is a breakfast dish that's typically served in layers. Although variations abound, this easy no-cook breakfast usually includes at least yogurt, granola, and some sort of fruit, compote, or purée. This fall breakfast parfait uses a lightly sweetened and spiced pumpkin purée as the fruit component. Breakfast parfaits can be made in any size and to fit most diets, so they're a good option for entertaining.

How to Make a Vegan Breakfast Parfait

If you eat plant-based or are hosting guests who do, then it's easy to make a vegan version of this pumpkin yogurt parfait. Just choose a plant-based yogurt and make sure you look at the granola ingredients carefully (some can contain egg whites or milk powder to help with binding), or make your own pumpkin granola. Coconut yogurt tends to have the richest, creamiest texture; my personal favorites are Cocojune and Siggi's plant-based coconut blend.

‍

How to Make a Gluten-Free or Grain-Free Breakfast Parfait

Since layered parfaits are so flexible, you can make this recipe gluten-free or grain-free as desired. All you need to do is choose a granola to match your diet. For gluten-free, look for options made with certified gluten-free oats. For grain-free, look for options made with coconut flakes, lupini bean flakes, etc., instead of oats.

‍

How to Make a Low-Sugar Breakfast Parfait

Trying to watch your sugar intake? This pumpkin yogurt parfait can easily become low-sugar. For the yogurt, choose an option with no added sugar. For the granola, look for options with no or limited added sugar. A good way to keep sugar in check is to make your own granola at home so that you can control the ingredients; this Pumpkin Pie Granola, in which pumpkin purée replaces much of the usual sugar and oil, works perfectly alongside the flavors in this parfait. Additionally, you can omit the maple syrup from the pumpkin layer if desired.

‍

How to Make a Higher-Protein Breakfast Parfait

This pumpkin parfait can become a higher-protein breakfast with a few simple swaps. For the yogurt, choose a protein-rich option like Greek yogurt or a plant-based style with added protein. You can also mix in a half scoop of protein powder (my go-to is the Vanilla Lucuma from Sprout Living; use the code ROGUE for 20% off). For the granola, choose one made from lupini bean flakes instead of oats.

Ways to Enjoy this Pumpkin Yogurt Parfait

There are many ways you can enjoy this seasonal pumpkin recipe! I love how versatile it is; for that reason, I find myself coming back to this combination again and again.

  • For an easy fall breakfast, make the recipe as written. This pumpkin yogurt parfait comes together in just a few minutes.
  • For meal prep, make a few portions at once and have them ready to go for busy fall mornings. I suggest layering the pumpkin and yogurt in jars, but leaving the granola off until you're ready to eat so that it doesn't get soggy. Seal the jars and store them in the refrigerator.
  • For fall and holiday houseguests, put together a build-your-own pumpkin breakfast parfait bar and let everyone assemble their own. You could add additional seasonal components like apple compote, fresh figs, and toasted pecans.
  • For a brunch party, make mini versions in pretty glasses. The recipe as written will yield 3-4 mini parfaits.
  • For a an elegant dessert, make mini versions and top each parfait with coconut whip and a drizzle of maple syrup. You could also use an especially indulgent yogurt and/or add some additional components like dark chocolate chunks. Ingredients and Substitutions

Here's what you'll need for this pumpkin yogurt parfait recipe, as well as some thoughts, tips, and possible substitutions. If you make any substitutions, I'd love to hear about it in the comments section below.

  • Pumpkin purée. Make sure to choose unsweetened pumpkin purée and not pumpkin pie filling.
  • Maple syrup. I like to sweeten the pumpkin with just a dash of maple syrup, but you can certainly omit this if you're trying to minimize added sugars.
  • Spices. You'll use a combination of cinnamon, ginger, nutmeg, and cardamom to flavor the pumpkin layer. You could also substitute a pumpkin spice blend if you have it on hand.
  • Yogurt. Feel free to choose vegan and/or unsweetened yogurt as desired. This pumpkin breakfast parfait will work best with a rich, thick yogurt.
  • Granola. I highly recommend making a batch of this Pumpkin Pie Granola to use in this parfait! It's vegan and uses pumpkin purée in place of much of the usual oil and sweetener. That said, you can certainly use whatever granola you enjoy. Flavors like pumpkin, cinnamon, or ginger will work best in this recipe.
