Vegan Matcha Cookies with a Tropical Twist

Looking for cookies that you can feel good about enjoying? These vegan matcha cookies are made with simple, whole-food ingredients and are loaded with flavor. You'll never believe they're entirely plant-based, gluten-free, and oil-free.

These healthy matcha cookies celebrate an iconic flavor combination: white chocolate and macadamias. Because my husband and I spend winters on the northernmost Hawaiian island, I'm a huge macadamia nut fan. In fact, I have a whole guide to tropical vegan recipes, many of which feature macadamias.

Ready to get baking? I know you're going to love these vegan gluten-free matcha cookies since they're delicious and nutritious. They have a perfectly crisp exterior and an indulgently gooey interior. I can't wait for you to try them!

Ingredients in Vegan Gluten-Free Matcha Cookies

You won't find any butter, refined flour, refined sugar, or oil in these healthy matcha cookies. Instead, they're made from just a few simple, whole-food ingredients. Nourishing macadamia butter (or cashew butter, if that's what you can find) replaces the usual butter, eggs, and oil; it acts as both a fat and a binding agent. Fiber-rich oat flour replaces the usual refined wheat flour, and maple syrup replaces the usual refined sugar. All in all, these are cookies that you can truly feel good about enjoying.

There are a few key flavor powerhouses in these vegan matcha cookies. Maple syrup adds a lovely warmth, as does a generous amount of vanilla extract. A full tablespoon of matcha powder yields a detectable but not overpowering matcha flavor, a fabulous bright green color, and powerful antioxidants. Sweet white chocolate and crunchy, buttery macadamias complement the matcha perfectly.

How to Make Vegan Gluten-Free Matcha Cookies

These white chocolate macadamia matcha cookies are easy to make. You'll just whisk together the wet ingredients, add the dry ingredients to the wet, and stir to make a thick dough. Add in plenty of white chocolate and macadamias, and you're ready to bake. Unlike many vegan gluten-free cookie recipes, these don't require any fussy flours, starches, or gums.

Tips for Perfect Vegan Matcha Cookies

Although this recipe is easy and uses minimal ingredients, I do have a few tips to make sure your matcha macadamia cookies turn out perfectly. Most importantly, make sure you're using a high-quality matcha; see my recommendation below. Additionally, you'll want to use a natural macadamia or cashew butter with no added oils or sugars, both of which can alter the texture of the nut butter.

Because these vegan white chocolate matcha cookies don't contain butter or oil, they won't spread. Accordingly, you'll want to flatten each one into a cookie shape before baking.

Finally, make sure not to over-bake them. This is important for all cookies, but is especially critical for healthy vegan cookies since they can become dry if baked for too long. Take them out of the oven as soon as the edges are set and you'll be rewarded with a soft, gooey texture in the middle.

Get my Favorite Matcha

Since matcha plays a starring role in these vegan gluten-free white chocolate macadamia cookies, you'll want to make sure you use a premium matcha powder that's bright green and has a delicate flavor with no grassy or bitter notes. My go-to is Matcha Nude; it's the only matcha I use at home and I recommend it so highly. Use the code ROGUE to get 15% off your order.

Ingredients and Substitutions

Here's what you'll need for these white chocolate macadamia matcha cookies, as well as some thoughts, tips, and possible substitutions. If you make any substitutions, I'd love to hear about it in the comments section below.

  • Macadamia or cashew butter. Nut butter is the fat and binding agent in these healthy matcha cookies. Macadamia butter works best since it enhances the macadamia flavor, although cashew butter can be easier to find. Both are relatively neutral in taste and have a light color. I don't recommend using another nut butter (e.g., peanut or almond) since the darker color will make the cookies look brown and the more assertive flavor will overwhelm the delicate matcha.
  • Maple syrup
  • Vanilla extract
  • Oat flour. I tested this recipe using Bob's Red Mill oat flour, which has a very fine texture. If you grind your own or use another brand, you might need to tweak the amount slightly to compensate for the different texture. Remember to choose certified gluten-free oat flour if needed for allergies.
  • Matcha powder. For the best flavor and color in these vegan matcha cookies, choose a high-quality matcha powder. I adore Matcha Nude; use the code ROGUE to get 15% off your order.
  • Baking powder
  • Salt
  • White chocolate chips. Remember to choose vegan white chocolate chips if needed.
  • Chopped macadamias. The star of the show, you'll mix macadamias into the dough and add a few macadamias on top of these vegan matcha cookies. If you can find them, roasted salted macadamias will yield the most pronounced flavor.

Closing Thoughts

I can't wait for you to try these vegan matcha cookies. The combination of the matcha with the sweet white chocolate and crunchy macadamias is just perfect. They have a subtle tropical vibe thanks to the macadamias, but are also cozy, so they can easily work year-round. Isn't that green color amazing?

I think these healthy matcha cookies are great proof that desserts don't have to be bad for you. They have fiber from oat flour, healthy fats and protein from nuts, and antioxidants from matcha, while also being dairy-free, egg-free, refined flour-free, oil-free, and refined sugar-free. Thanks to those nourishing ingredients, these cookies are a great post-workout treat or on-the-go snack, as well as a wholesome dessert.

  • 1 tbsp matcha powder
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ c white chocolate chips
  • ¼ c chopped macadamias
