If you really want to lean into tropical flavors, try swapping in as many Hawaiian, Caribbean, or Southeast Asian fruits as you can. For red, try papaya. For orange, you can use a deeply-colored mango. For yellow, you can use pineapple as written or see if you can find golden kiwi. For green, try green kiwi. Blue is trickier; you might need to stick with blueberries even though they're not tropical. For purple, go for a pink vibe with pink dragonfruit.

How to Make Fruit Skewers

These fruit skewers are easy to make and only take about ten minutes, once the fruit is cut. If you're in a time crunch, feel free to get an assortment of pre-cut fruit at the store. All you have to do is thread the fruit on in rainbow order: a strawberry, a cantaloupe ball (or chunk), a pineapple chunk, a honeydew ball (or chunk), a large blueberry, and a large red grape. You can make as many or as few as you want.

Although you can certainly swap in your favorite fruit, keeping the same colors will maintain the rainbow effect. For example, you could use papaya instead of a strawberry for red, or use mango instead of pineapple for yellow. I'd suggest avoiding fruits that brown easily (like apples) and fruits that are very fragile (like raspberries).

The mojito dipping sauce is easy too. You'll just stir together full-fat, creamy yogurt with some lime juice and fresh mint, plus an optional dash of sweetener if you use an unsweetened yogurt. It's fresh and vibrant, and provides some nice decadence to these otherwise light rainbow fruit skewers. Remember to choose a vegan yogurt if needed.

  • Cantaloupe balls
  • Pineapple chunks
  • Honeydew balls
  • Blueberries
  • Red grapes
  • Whole lime. You'll use both the zest (for sprinkling on the finished platter) and the juice (for making the mojito yogurt dipping sauce).
  • Fresh mint
  • Yogurt. The texture of the dipping sauce will be most luscious if you use a full-fat, thick yogurt like Icelandic or Greek. For a vegan version, use a full-fat coconut yogurt. I've written this recipe to use an unsweetened vanilla yogurt. If your yogurt is sweetened, you'll likely want to omit the sweetener.
  • Honey or maple syrup. If using an unsweetened yogurt, you can sweeten the dipping sauce to taste with a small amount of honey or maple syrup. Remember to choose maple syrup for a fully vegan version if needed.

These rainbow fruit skewers are fresh, colorful, and vibrant. Paired with a lime and mint dipping sauce, they're the perfect easy summer party dessert.

Ingredients

  • 8 whole strawberries
  • 8 cantaloupe balls
  • 8 pineapple chunks
  • 8 honeydew balls
  • 8 large blueberries
  • 8 large red grapes
  • Zest of a lime
  • 1-2 tsp lime juice
  • Sprig of fresh mint
  • ½ c full-fat unsweetened vanilla yogurt
  • 1-2 tsp honey or maple syrup

Instructions

  1. Cut the tops from the strawberries.
  2. Thread a strawberry onto a skewer, with the pointed end facing upward.
  3. In rainbow order, thread the remaining fruit onto the skewer (cantaloupe, pineapple, honeydew, blueberry, and grape).
  4. Repeat for the remaining skewers, creating 8 total. Lay the skewers on a serving platter.
  5. Zest the lime, setting the zest aside, and then juice the lime.
  6. To make the mojito yogurt dipping sauce, chop the mint very finely. Stir together the yogurt, honey or maple syrup, lime juice, and fresh mint. Adjust the sweetness and tartness to your own tastes. Add the dipping sauce to a small bowl in the center of the platter.
  7. Sprinkle the lime zest on top of the fruit and dipping sauce.
