Because these one-bowl peanut butter cookies don't contain butter or oil, they don't spread. Accordingly, you'll want to gently flatten each one into a cookie shape before baking.

Finally, make sure not to over-bake them. This is important for all cookies, but is especially critical for healthy vegan cookies since they can become dry if baked for too long. Take them out of the oven as soon as the edges are set and you'll be rewarded with a soft, fluffy texture in the middle.

Ingredients and Substitutions

I don't suggest making this recipe with a non-cultured vegan cream cheese that contains starches, gums, or oil, since the resulting texture will be very different.
  • Natural, unsweetened peanut butter. Look for drippy peanut butter with just two ingredients: peanuts and salt.
  • Maple syrup
  • Oat flour. I tested this recipe using Bob's Red Mill oat flour, which has a very fine texture. If you grind your own or use another brand, you might need to tweak the amount slightly to compensate for the different texture. Remember to choose certified gluten-free oat flour if needed for allergies.
  • Baking powder
  • Salt
  • Dark chocolate chunks. Remember to choose vegan chocolate chunks if needed.
  • Flaky sea salt

These one-bowl vegan gluten-free peanut butter chocolate chunk cookies use vegan cream cheese for structure and flavor. An easy, delicious cookie recipe with minimal cleanup!

Ingredients

  • 8 oz cultured vegan cream cheese
  • 1 c natural, unsweetened peanut butter
  • ½ c maple syrup
  • 2 c oat flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¾ c dark chocolate chunks
  • ¼ tsp flaky sea salt

Instructions

  1. Preheat the oven to 350°.
  2. In a large mixing bowl, combine the cream cheese, peanut butter, and maple syrup. Whisk until no clumps remain.
  3. Add the dry ingredients (oat flour, baking powder, and salt) to the wet ingredients and mix with a spatula until the dough is thick and smooth.
  4. Stir in most of the chocolate chunks, reserving about 2 tbsp for pressing into the tops of the cookies.
  5. Scoop the dough into balls that are a heaping 2 tbsp in size, yielding about 12 cookies. Flatten each ball into a disk about half an inch thick, then press several additional chocolate chunks into the top of each cookie.
  6. Bake for 12-15 minutes until the cookies have barely begun to brown along the edges but are still soft inside. Sprinkle with flaky sea salt immediately after baking.
