Kōloa Rum Recipes: Cocktails, Desserts & More

If you're looking for Kōloa Rum recipes, you've come to the right place! Kōloa Rum, based in Kaua'i, Hawai'i, makes a wonderful range of rums, from light and versatile White Rum to rich Dark Rum, along with tropical and specialty flavors like Coconut, Spice, and Coffee. I use Kōloa Rum products in everything from colorful tropical cocktails to cozy seasonal drinks, desserts, sauces, and more.

I've been working with Kōloa Rum for years, and I've developed quite a collection of recipes featuring their products. Additionally, since my husband and I live part-time on Kaua'i, we're intimately acquainted with Kōloa's diverse range of rums (in fact, I have a whole guide to tropical recipes). Below, you'll find a brief overview of Kōloa's six core rum expressions, then detailed sections and recipe links for each.

Me + Kōloa Rum: A Love Story

My love of Kōloa Rum is deep and long-lived! My husband and I eloped to Kaua'i and got married on the beach there in 2013, which is when we first discovered Kōloa. As locals joke, Kaua'i either chews you up and spits you out, or sucks you in forever. We instantly fell head-over-heels for the island and have spent part of every year there since.

It's a very special treat to have local rum on Kaua'i. We always get Kōloa Rum while we're there and enjoy making cocktails on the beach, sipping Mai Tais on our lanai at sunset, and visiting the tasting room. I've been working with Kōloa Rum in an official capacity since 2020, and they've been a very important long-term supporter of The Rogue Brussel Sprout blog. We've truly grown together and it means a lot to me to be able to share this special rum with you.

I often get asked which Kōloa Rum product is my favorite, but my answer really depends on the setting! In the section below, I describe each of their six core rums and how I enjoy using them. Whether I'm mixing up a cocktail for a beach picnic or Thanksgiving dinner, there's a Kōloa Rum to match! Given my own personal love of tropical flavors and ingredients, I'm a big believer in the versatility of rum.

You'll also find dozens of Kōloa Rum recipes below, ranging from beachy cocktails to holiday sips to special desserts. They're all recipes that we make and enjoy frequently at home, so I hope you love them as much as I do.

Meet the Kōloa Rum Products

Not sure which Kōloa Rum to reach for? Here's a quick introduction to the core expressions I use in my recipes, starting with the classic rums and moving into Kōloa's specialty flavors. I really love them all, and always have a fully-stocked bar with the whole suite (full disclosure: I highly recommend trying them all!).

  • Kōloa White Rum: Light, clean, and straightforward, Kōloa White Rum is wonderfully versatile. It's a natural choice for vibrant cocktails where you want fresh fruit, citrus, or herbs to shine, including daiquiris, mojitos, punches, and other tropical drinks. It's also a personal go-to for any cocktail with a bright color that I want to look clean rather than muddy.
  • Kōloa Gold Rum: Kōloa Gold Rum brings more richness and depth while remaining versatile. I like it in fruit-forward cocktails and punches when I want a little more body and warmth than White Rum provides. It can also straddle seasons, working nicely for cozier fall and winter rum cocktails.
  • Kōloa Dark Rum: Rich and robust, Kōloa Dark Rum brings depth to rum cocktails. Their dark rum has a pronounced vanilla flavor, unlike any other dark rum I've had. It's especially useful in bold tropical drinks and punches, and it's also wonderful floated over a cocktail when you want a concentrated layer of rich flavor.
  • Kōloa Coconut Rum: Fragrant, seductive, and unmistakably tropical, Kōloa Coconut Rum is one of my favorite choices for vacation-worthy cocktails. It pairs beautifully with pineapple, citrus, grapefruit, berries, and other bright tropical flavors. It's also a very unique product since it's an 80-proof coconut rum rather than a weaker, sweeter coconut rum liqueur.
  • Kōloa Spice Rum: Warm and aromatic, Kōloa Spice Rum (at a whopping 88 proof!) works beautifully in both tropical cocktails and cozy seasonal drinks. Its spiced flavor profile also makes it especially versatile in desserts. Unlike most spiced rums on the market, this one is amber-colored rather than dark, meaning it won't visually obscure the other colors in the cocktail.
  • Kōloa Coffee Rum: Rich, smooth, and very flavorful, Kōloa Coffee Rum is a fun way to bring roasted coffee flavor into cocktails. I especially like using it for brunch cocktails and after-dinner sipping.

I love how versatile Kōloa's rums are. Whether you're mixing up a tiki cocktail to sip on the beach or a cozy cocktail for a chilly fall night, there's a rum and a recipe to match.

‍

Kōloa White Rum Recipes

Kōloa's White Rum is a wonderful starting point if you're new to Kōloa. Its clean, light character makes it especially easy to pair with fresh citrus, fruit, herbs, and other bright ingredients. Reach for White if you're mixing a colorful cocktail that you want to maintain its vibrant hue.

  • Pink Dragonfruit Pineapple Rum Fizz: A vibrant tropical rum cocktail combining pink dragonfruit and pineapple with the light, refreshing character of Kōloa White Rum. This one is perfect for a brunch party, bridal shower, bachelorette party, or Mother's Day.
  • Red, White & Blue July 4th Spiked Limeade: A festive layered summer drink that's bright, citrusy, colorful, and wonderfully refreshing. Using Kōloa's white rum allows the natural hue of the blue layer to really shine.

‍

Kōloa's Gold Rum adds a little extra richness and warmth while remaining versatile enough for bright, fruit-forward drinks. It's a particularly nice choice when you want your rum to have a more noticeable presence without overpowering the other flavors.

Koloa's Gold Rum is richer and cozier than the White Rum. It excels in drinks where the rum flavor is a central component, and where the other ingredients can stand up to the rich rum. This Chaider (Chai + Cider) Rum Punch is one of my favorite cocktails to make for a fall gathering or even Thanksgiving.

‍

Kōloa Dark Rum Recipes

When you want a rum cocktail with more depth, Kōloa's Dark Rum is a great choice. Its rich, vanilla-forward flavor profile works particularly well with tropical fruit and bold flavors, and I especially love using it as a float to add a deep layer of rum flavor (and a boozy pop!) to a drink.‍

Its aromatic, spiced flavor works beautifully in anything from tropical cocktails to cozy seasonal drinks and even desserts. I especially love pairing it with fruit, caramel, and warm baking spices, making it a versatile rum to reach for throughout the year.
