  • Choose ready-to-go ingredients. Look for a cocktail recipe involving spirits, pre-made real juices, and easy mixers like ginger beer, tonic water, soda water, or coconut water. Avoid options with fresh citrus since trying to juice limes or lemons on the beach always makes a sticky mess. If you want to use fresh citrus, juice it at home and bring it in a small bottle.
  • Mix right in the serving glass. There's no need to bring a shaker for a casual picnic cocktail. Just add the spirit and juice to the glass with ice, give it a stir, and top it with a carbonated mixer.
  • Omit or simplify garnishes. No one expects a garnished cocktail at the beach. Or, if you want to go for the wow factor, pre-slice some simple garnishes and bring them in a container.
  • Bring extra ice. Especially if it's sunny out, ice can melt very fast. Bring more than you think you need, ideally in an insulated container. Large thermoses or to-go coffee mugs work great for this.
  • Protect your cocktail. Although open glasses are aesthetic, they can easily get spilled or filled with bugs. Try using insulated wine tumblers with lids, which will not only protect the drink but will also slow melting.

Pineapple Coconut Fizz Mocktail (or Low-ABV) Variation

Looking to make a low- or no-alcohol version of this beachy summer drink? Feel free to leave out the rum and add 1 oz fresh-squeezed lime juice for some additional complexity. For a low-ABV version, use 1 oz coconut rum instead of the 2 oz as written.

Coconut Rum Pointers

For this Pineapple Coconut Rum Fizz (and every coconut rum cocktail recipe here on the blog) I use Koloa Rum Coconut Rum from Kaua'i. My husband and I spend every winter on Kaua'i and always drink it there, although Koloa Rum is available in many mainland locations and through online spirits distributors. Note that this is not the same as Malibu, which is a lower-proof coconut rum liqueur.

If you can't find Koloa and only have access to Malibu, try using 1.5 oz white rum and 1 oz Malibu (instead of the 2 oz coconut rum in the recipe card), otherwise the drink will feel too sweet.

  • Unsweetened fizzy coconut water. Look for unsweetened, unflavored, carbonated coconut water in refrigerated cans. If you can't find it, you can use non-carbonated coconut water or a 50/50 mix of coconut water and soda water.
  • Optional garnishes. To make this cocktail feel especially festive, garnish it with a pineapple slice and a sprig of fresh mint.
